Main Meals- Sarah Rheault's Trukey Chili

[Makes 8 servings]


Ingredients

1 1/4 lbs ground turkey
1/4 cup chili powder
1 tbl ground cumin
1 1/2 tsp dried crushed oregano
1 1/2 tsp salt
1 tbl canola oil
2 onions chopped
3 minced garlic cloves
2 cans of diced tomatoes with chilies
1 can each of black beans, pinto beans, dark red, pink and red kidney beans.



Directions


Spread ground turkey on a plate.Mix the spices and sprinkle mixture evenly over the turkey, mix with a fork.In a saucepan, heat canola oil.Add onions, stir.Add garlic when onions get transparent.When onions and garlic have softened but not browned, add the turkey-spice mixture.Raise heat to medium high and saute until the turkey has evenly browned, breaking it up as it cooks.Add two cans of diced tomatoes.Raise the heat long enough to bring chili to a boil momentarily, then lower the heat, cover the pot, and simmer for 1 hr.Drain the contents of the 5 cans of beans, rinse them, drain them again.Add beans, cover again, simmer for another 30 mins. Serve over rice or macaroni.
