Main Meals- Lucy Triedman's Pesto and Goat Cheese Quesadillas

Ingredients
2 ounces goat cheese (adjust amount to suit size of tortilla)
3 tablespoons pesto sauce, preferably hommage (adjust amount to suit size of tortilla) 
2 flour tortillas
2 tablespoons olive oil (good quality)


Directions

  • 1 Heat olive oil in a skillet over med/med high heat.

  • 2 Meanwhile, spread one side of one tortilla with goat cheese. Spread one side of the other tortilla with pesto.

  • 3 Sandwich tortillas together with the filling on the inside.

  • 4 When oil is hot, add the quesadilla to the pan. Cook until the bottom side is crispy and golden brown.

  • 5 Flip quesadilla and continue cooking on the remaining side. If necessary, you may add a splash more olive oil at this step.

  • 6 When quesadilla is golden brown and crispy on both sides, remove from pan and drain on a paper towel.

  • 7 Slice into 6-8 servings (depending on size) and serve hot.
